Caramelized Leek, Mushroom & Feta Quiche (Bacon added for greatness)

Let me start off by saying, in this kitchen — for now — we use premade crust.

Why, you ask?

Because nothing in me wanted to learn how to make my own pie dough today. Nor do I have a rolling pin to assist in the kitchen. The only item I own remotely reminiscent of a rolling pin, is my Mr. and believe me I’d be the only one eating this quiche if I decided to use that.

I take that back… I have no doubt HG would join me.

I’ve had a slight obsession with caramelized mushrooms and onions lately. So when I came across this recipe — which spoke to my soul, I had to try it.

While growing up I had a serious affliction with mushrooms and onions. Well any and all veggies - thanks to my mother - whom never forced us to eat our veggies because she doesn’t eat a SINGLE ONE. Now at this ripe age, I’m obsessed with this caramelized version of these two.

And when divinely combine—become one of the most mouth watering bites you dare place in your mouth.

Moreover - I’m obsessed with ALL veggies and need to include them into all of my daily recipes.
