…and people like me who stand over the kitchen counter with a fork muttering, “I’m just evening the edges.”

This Banana Crumb Cake falls directly into the second category.

She’s soft. She’s buttery.

She’s aggressively cinnamon-forward. The banana keeps the cake ridiculously moist while the crumb topping practically collapses into sugary pockets of heaven.

And if you drizzle the glaze over the top while it’s still slightly warm? Forget dignity entirely.

This is the kind of recipe you make when:

  • the bananas on your counter are entering their “are you edible” era,

  • the weather says “stay inside,”

  • or you simply need something sweet while emotionally processing life with coffee and a messy bun.

Ingredients

Cake

  • 2 cups all-purpose flour

  • 3 teaspoons baking powder

  • 1 teaspoon ground cinnamon

  • 1 teaspoon salt

  • 3 ripe bananas, peeled and mashed

  • ½ cup unsalted butter, softened to room temperature, again, use vegan butter for dairy-free option

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla

  • 1 cup unflavored oat milk (or your preferred milk choice)

Instructions 

  • Preheat oven to 350º F. Grease a 9 inch deep dish cake pan.

  • In a large bowl, use your hands to crumble together the cold butter cubes, flour, sugars, and cinnamon until the mixture resembles a crumbly topping. Set aside the crumb mixture. 

  • In a seprate large bowl, whisk together flour, baking powder, cinnamon, and salt. Set aside.

  • Use a mixer or old school it with your hand and a trusty whisk and mix softened butter on medium until creamy. Add the sugar and mix for another minute. Then add the eggs, vanilla, and mashed bananas, and mix just until ingredients are combined.

  • Turn the mixer down to low, and alternate mixing in milk and flour until all ingredients are incorporated.

  • Pour the cake mixture into the prepared baking dish. Top with all of the crumb mixture.

  • Bake at 350º for 65-70 minutes, until a toothpick comes out clean. 

  • To make the optional glaze: In a small bowl, whisk together the powdered sugar and 1 tablespoon of milk. Add more milk as needed until you get the glaze consistency you prefer. Set aside.

  • Cool at room temperature for 5-10 minutes before drizzling the glaze over the top, slicing, and serving.
