Just like my Grandmother…
I somehow managed to bag myself a smokin’ hot, grey-haired Italian Stallion.
And yes — he swears he loves me for my cooking…
amongst a few other things we’re not discussing in this corner of The Hollow Quill—EHHEMMMM.
Yet, in all the recipes I’ve tried and wrote, an authentic Italian Sunday gravy isn’t one of them—
sauce, depending on who you ask and how heated the debate gets.
Whatever you want to call it, I asked Karen, HG’s Mom to teach me her ways in the kitchen.
Wanting to taste the food he grew up on.
And wouldn’t you know it—
Karen loves garlic just as aggressively as I do.
So we sat in her kitchen down in Forked River, New Jersey—
where the sun rises over the back bay and spills orange and red across the sky like a damn Thomas Kinkade painting.
And somewhere between chopping garlic and opening cans,
we started talking.
About the town we grew up in.
About Keansburg boardwalk summers.
About family stands and long days and longer nights.
About Pizza V—the best of the best on that one-mile stretch—
missed, talked about, and still not reopened like a local heartbreak we’re all pretending we’re over.
And that’s the thing about this sauce—
it’s never just sauce.
It’s stories.
It’s history.
It’s the people who raised you… and the ones who taught you how to stay.

You might as well do it right.
And then… we cook.
No overthinking.
No measuring cups.
Just a big pot, a wooden spoon, and enough garlic to make a statement.
Here’s how Karen does it—
and now, how we do it too:
Ingredients
3-28oz Tuttorosso Tomato Sauce
2-28oz Tuttorosso Tomato Puree
1-28oz Tuttorosso Peeled Plum Tomatoes
1-6oz Tuttorosso Tomato Paste
GARLIC!!!!!! 2-3 whole garlic minced-or already minced
S/P/GP/OP *
2 tbsp Dried Basil
2 tbsp Dried Oregano
1 tbsp granulated5 ugar (to cut acid - or a carrot)
Parmesan rind optional for sauce but must have for grating over your pasta later on
Directions
Heat olive oil in a large pot over medium heat.
Add your garlic mountain—and yes, this is where people judge.
Let it cook just until fragrant (not burnt).
Pour in:
All 3 cans of sauce
Puree
Hand-crushed plum tomatoes
Tomato paste
Stir until combined.
*Add:
Salt & pepper
Garlic powder (because fresh garlic isn’t enough—obviously)
Onion powder
Basil
Oregano
Taste. Adjust. Repeat.
Karen never measured—and neither do we.
We leave it on the stove low and let it simmer all day long.
